My family likes to eat these sugar candies in the evening with a freshly brewed cup of Persian tea. Simple ingredients, easy to make, just the right amount of sweetness. A must-try dessert!
Carmelized Sugar Candy (Poolaki)
- 1 cup sugar
- 1 teaspoon rose water
- 1 cup slivered almonds
- finely chopped pistachios for garnish
Pour sugar and rose water into a heavy saucepan. Heat on medium temperature, stirring frequently. When the sugar is melted, swirl it around the pot a few times. Let it heat for another 30 seconds and swirl again. Repeat until the sugar turns an amber color.
Remove from heat. Do not boil or over cook. Quickly mix in almonds, pistachios or any other desired toppings. With a teaspoon, drop the syrup in dollops onto a cookie sheet covered with wax paper.
Let cool completely. Peel candy pieces from the wax paper and enjoy!
