Zereshk polo is made with zereshk berries (barberries) and saffron. It is a delicious accompaniment to koobideh (beef) kabob, barg (filet mignon) kabob, joojeh (chicken) kabob, lamb kabob or any type of baked fish. My familiy likes to sautee salmon with garlic and fresh lemon juice to serve with zereshk polo.
- 3 cups basmati rice, cooked
- 1/2 cup zereshk, cooked
- 1 teaspoon saffron water
- 1 tablespoon butter, optional
Mix 1/4 cup cooked rice with saffron water. Combine the remainder of the cooked rice with zereshk, mixing gently to avoid breaking the rice. Top with 1 tbsp of butter and allow to melt across the top of the rice (optional). Sprinkle saffron rice mixture on top and garnish with additional zereshk berries.
*Optional – add 1 tablespoon sugar to cooked zereshk. Mix until sugar is dissolved and proceed with recipe as directed.
